The ‘Too Busy’ Vegetable Frittata

Voila, a health frittata meal for your family packed full of vegetables with minimum effort.

Ingredients
  

  • 3 cups vegetables
  • 1 onion diced
  • 3 cloves garlic
  • 5 eggs beaten
  • 1 tbsp pine nuts
  • 1 chunk fetta cheese
  • parsley
  • thyme
  • some nuts & seeds - sunflower, pepita, sesame
  • few tomato slices
  • sprinkle cheddar cheese

Instructions
 

  • Chop all ingredients and lightly fry
  • Add the beaten egg and fetta cheese
  • Scoop into a pie dish
  • Add some sliced tomato and / or grated cheddar cheese as topping
  • Bake in a moderate oven for 25 minutes
