
The ‘Too Busy’ Vegetable Frittata
Voila, a health frittata meal for your family packed full of vegetables with minimum effort.

Ingredients
- 3 cups vegetables
- 1 onion diced
- 3 cloves garlic
- 5 eggs beaten
- 1 tbsp pine nuts
- 1 chunk fetta cheese
- parsley
- thyme
- some nuts & seeds - sunflower, pepita, sesame
- few tomato slices
- sprinkle cheddar cheese
Instructions
- Chop all ingredients and lightly fry
- Add the beaten egg and fetta cheese
- Scoop into a pie dish
- Add some sliced tomato and / or grated cheddar cheese as topping
- Bake in a moderate oven for 25 minutes
