I love EASY cooking.
This is a wonderful recipe for when you are squeezed for time, but want to keep the family or yourself healthy.
Any type of vegetables – 3 cups chopped, sliced or diced.
3-4 cloves of garlic
Large chunk of fetta cheese
Some nuts and seeds (sunflower, pepita, sesame)
5 eggs (beaten)
Garden herbs such as thyme, parsley
Chop all ingredients and lightly fry
Add the beaten egg and fetta cheese
Scoop into a pie dish
Add some sliced tomato and / or grated cheddar cheese
Bake in a moderate oven for 25 minutes.
Voila, a health frittata meal for your family packed full of vegetables with minimum effort.
